The field to fork journey of various types of game meat has been outlined online to professional chefs and catering colleges across the UK in a series of virtual masterclasses delivered by BASC.

Working in partnership with The Chefs’ Forum, BASC delivered a range of virtual engagement sessions and cookalongs to promote and celebrate game meat.

Curtis Mossop, BASC’s head of pathways to shooting, said that despite a necessity to work with game meat, the student chefs rarely had the opportunity to learn more about the provenance of their ingredients. Through collaboration with The Chefs’ Forum, BASC has delivered Continuing Professional Development (CPD) masterclasses on species ecology, their management and the associated conservation net gain to 149 delegates. The session finished off with a virtual game meat cook-along.

He said: “These are the chefs of tomorrow and if they can make more informed choices on the game meat they source, through their deeper knowledge of species and their management, we are taking positive steps forward to educate new audiences on shooting, conservation and game meat.”

Rebecca Saunders from The Chefs’ Forum said: “We were delighted to invite Matt Gisby and Curtis Mossop from BASC to teach a game cookery masterclass to our Chefs’ Forum Academy Colleges.

“It is fantastic to be able to teach students about conservation and the different game species in the UK and impart culinary knowledge of what to cook with them.

“The main thing with game meat is not to be scared of it and this was a fantastic opportunity to learn from the very best in the business.”

Denise Charles, head of curriculum at West London College, said: “Hospitality and catering students at West London College thoroughly enjoyed the virtual workshop delivered by BASC. It was great to have Chef Matt actually cook a venison dish and answer questions about cooking venison, cooking times and suitable side dishes.

“We are really looking forward to when we can have BASC come in and cook further dishes with students. Thank you for delivering a successful and engaging online workshop.”
